- - - - - - - - - - - - - - N O T A B L E O A T M E A L - - - - - - - - - - - - - - 2 servings Ingredients: ----------- Rolled oats, water, plain soy milk (or moo milk), salt, ground cinnamon, ripe banana Optional: dried currants, tangerine or orange peel, honey Method: ------ Stovetop: Use a small pot with tight fitting lid; bring water to boil. Add oats, salt, cinnamon, currants, tangerine peel; cover; reduce heat to very low; allow to cook for about 10 minutes. Do not stir. Microwave: Use a medium size bowl and perhaps a plate for a lid. Add water, oats, salt, cinnamon, currants, tangerine peel; uncovered, bring to a boil, oatmeal with puff up towards the top of the bowl. Stop oven, cover the bowl, continue on lowest setting for about 10 minutes. Do not stir. While oatmeal is cooking, peel banana, slice once lengthwise, then cut into 1/4 - 1/2 inch slices; distribute to two bowls for serving. Heat the soy milk in a measuring cup in the microwave for about one minute -- don't boil; if cooking oatmeal in microwave, put the milk into the microwave right as the oatmeal comes out. (Alternatively, heat milk in a double boiler or some other method; you'll have to figure that one out!) When the oatmeal is cooked, spoon it over the bananas. If using honey, add that to the bowls now. Pour the milk over the oatmeal. Optionally top with more tangerine peel or currants (or whatever) for garnish. Serve now! Quantities: ---------- 1 cup water 1 cup rolled oats ("thick", see Notes) 1/8 tsp salt 1/16 tsp ground cinnamon 1 Tbs dried currants 1 Tbs tangerine or orange rind 1 whole ripe banana, peeled 2-4 tsp honey 1 cup milk (of whatever kind) 1 Tbs tangerine or orange rind for garnish Variations: ---------- Other flavors of soy milk, such as vanilla, can be tried. If you use chocolate, you might want to leave out the currants and tangerine peel. Other fruits: mango, strawberries, blueberries, ... Notes: ----- This recipe assumes "thick rolled oats", not "regular rolled oats". If using regular (eg, Quaker Oats), adjust times and proportions accordingly. It will probably cook faster, and consistency will be different. Rolled oats, water, and soy milk are 1 to 1 to 1, 1/2 cup each per serving. Stick to this proportion if increasing or decreasing servings. Very easy to remember, and all other ingredients are 'to taste'. The only thing that may need to be adjusted is cooking heat or time. Beyond oats, water, milk, and perhaps salt, all of the other ingredients are really optional. But, they add a lot in terms of flavor. If using sweetened soy milk, then you might want to skip the honey.
